Avocado Apple & Arugula Salad

I'm always on the look out for a new salad, and this one is absolutely perfect, having arugula, avocado, apple, sunflower seeds, and red onion, with a nice lemony dressing. I made this a long time ago while I was still in Alberta, waiting to move and needing something to set me back on track. This salad will do the trick. It's light, refreshing, and satisfying, and if you're in one of those moods where you just have to eat, don't feel bad about stuffing yourself with this. This salad is chock full of great things, such as arugula which is SO good for you, but it's not overwhelming on taste or time; the dressing is basically lemon, honey mustard, and olive oil, and is one that I now use often on any random salad. Wonderful as is, but perfect with a nice piece of grilled salmon for an extra satisfying weeknight dinner.

Recipe from Tracey at Shutterbean

1 apple, chopped
1 avocado, chopped
6 cups arugula
3 tablespoons sunflower seeds
1/4 red onion, minced

Dressing:
1 tablespoon honey mustard
juice of 1 lemon
2 tablespoons olive oil
1 teaspoon honey
salt and pepper



Chop ingredients. I used a Gala apple.


Put in a bowl with arugula and sunflower seeds.


Make dressing, pour over.


Toss.


Eat, and enjoy!
